What is a kama of tuna?

The kama of the tuna is the gill portion of the belly and the back of the tuna, and is a rare part of the tuna, from which only two pairs are obtained per tuna.

 It has plenty of fat because it is located next to Ootoro (large fatty tuna)! When grilled, the fat and flavor spreads out, and the meat-like texture makes it an excellent dish!

How to enjoy thick tuna kama

Because the kama of the tuna is thick, the key to grilling it is to heat it slowly and thoroughly through to the inside. Grilling the kama of this tuna, which is valued for its meatiness, brings out the flavor of the fat and allows you to enjoy a good texture and flavor. The charring process of the kama during the cooking process also enhances the aroma and makes it even more delicious.
